Are you looking for a refreshing and bright breakfast to start your day on the right foot? Maybe one that takes less than 5 minutes to prepare the night before? If you answered yes to those questions, keep on reading! These Blueberry Lemon Overnight Oats are gluten-free, refined sugar-free, and so simple to make. The perfect breakfast for busy mornings where you don’t feel like cooking (we can all relate).

Y’all already know that overnight oats are my jam. They come together in a few minutes the night before, then you don’t have to worry about breakfast in the morning. Sounds like a win-win to me! There are so many flavor combinations you can work with when making overnight oats, but these blueberry lemon overnight oats have to be one of my favorites.

What Ingredients Do I Need?

To make this refreshing and delicious breakfast, you’re going to need the following ingredients:

  • Rolled oats
  • Frozen blueberries
  • Greek yogurt
  • Chia seeds
  • Maple syrup
  • Lemon juice
  • Vanilla extract
  • Cinnamon
  • Unsweetened vanilla almond milk

Making the Overnight Oats

There really isn’t too much to explain here, it’s pretty self-explanatory! I’ll give you the quick run-down.

Start by grabbing a container or jar with a lid the night before you’re ready to eat these. Add in the rolled oats, frozen blueberries, Greek yogurt, chia seeds, maple syrup, lemon juice, vanilla extract, cinnamon, and almond milk to the container and stir well. You can also shake the jar or container around to ensure that everything is mixed.

You don’t have to use frozen blueberries for this recipe, I just find that it’s more convenient and a bit cheaper than fresh. The frozen blueberries also give these oats a gorgeous blue color that makes them very aesthetically pleasing to look at!

Once all of your ingredients are combined, you’re going to put the container in the fridge overnight, or for at least 6 hours. Take it out in the morning and give it a good mix. You can add some additional blueberries and lemon zest on top if you choose. Enjoy!

There are tons of toppings you can add to these blueberry lemon overnight oats that would be delicious. I love adding blueberries and lemon zest, but here are some options that would be delicious:

  • Chopped walnuts or pecans
  • Peanut butter
  • Fresh berries
  • Granola
  • Drizzle of honey
  • Pumpkin or sunflower seeds
  • Greek yogurt
  • Whipped cream
