Pumpkin season is among us, which means time for unlimited pumpkin recipes! These pumpkin pie overnight oats are the ultimate fall breakfast that is so easy and quick to make. They’re gluten-free and tastes like you’re eating pumpkin pie for breakfast but without all the sugar. These overnight oats are the perfect breakfast to get you in the fall mood because of all the warming flavors. Let me tell you, these oats are THICK (team thick oats, am I right?!) They are so filling and delicious, you’re absolutely going to love these pumpkin pie overnight oats!

Overnight oats are a staple in my diet because of the convenience and versatility. Usually, when I’m at school, I rely on overnight oats because I don’t have to worry about spending time in the morning on making an elaborate breakfast (and can spend more time getting some zzz’s). Now that I’m home, I don’t eat them as much as I would like to because I don’t have anywhere to go! I wanted to bring them back, but make it fall edition. These pumpkin pie overnight oats certainly did not disappoint! They take 5 minutes to prepare, then you’ll have a tasty fall breakfast for the morning!

What Ingredients Do I Need?

For these pumpkin pie overnight oats, you really don’t need too many ingredients. Certainly not as many as a pumpkin pie! Don’t worry, it’s still going to taste like a pumpkin pie, it’s just 10x easier to make. Here’s everything you’ll need:

  • Rolled oats (I used the Hearty Grains & Seeds Hot Cereal from The Soulfull Project)
  • Canned pumpkin puree (NOT pumpkin pie filling)
  • Greek yogurt
  • Maple syrup
  • Almond milk
  • Pumpkin pie spice
  • Cinnamon

Benefits of Overnight Oats

As I said before, there are so many benefits to overnight oats. The first one being the convenience aspect. I don’t know about you guys, but I have no patience for making oats in the morning. I’m not sure if I’ve just gotten so used to overnight oats or what, but I cannot be bothered! Overnight oats are made the night before and require zero cooking. I’ve come to prefer my oats cold instead of hot, but you can certainly heat them up in the morning if you prefer.

Secondly, oats on their own provide so many health benefits. They are high in fiber, which is great for heart health, digestive health, and will keep you full and satisfied. Whenever I have oats for breakfast, I’m always good until lunch and don’t need any snacks. They are so filling! Rolled oats are also super cost-friendly and will run you around $3 for a huge bag. They’ll last you forever and will give you so many meals for a great price!


Toppings

I wanted to stay in the fall flavors with my overnight oats, so I kept the toppings simple. My pumpkin pie overnight oats were topped with some extra maple syrup, dried cranberries, and walnuts. You can totally add some fresh fruit, peanut butter, toasted pecans, coconut flakes, or granola. Any of those toppings would be AMAZING. If you’re really feeling fancy, you can even add some chocolate chips. Totally next level.

Ingredients

  • 1/2 cup rolled oats

  • 1/3 cup pumpkin puree

  • 2 tbsp greek yogurt

  • 1 tbsp maple syrup

  • 1/2 tsp pumpkin pie spice

  • 1/2 tsp cinnamon

  • 1/2 cup almond milk

Directions

  • Combine all of the above ingredients in a container, and mix until well combined. The oats should be a beautiful orange color.
  • Cover with a lid and refrigerate overnight. Add your toppings in the morning and enjoy!
