Are you ready for Sunday brunch!? Say no more with this easy and delicious Vegan French Toast. It’s plant-based and can easily be made gluten-free. You can add whatever toppings you have on hand to make this recipe totally your own! I personally love adding maple syrup and fresh fruit. SO GOOD.

French toast is such an easy brunch recipe, and is even easier to make vegan. Instead of using eggs in this recipe, we’re using ground flaxseed. Flaxseed is a great source of heart and brain-healthy omega-3 fatty acids. They also bulk up the dip to dunk the eggs in for extra texture and taste!



What Ingredients Do I Need?

To make this vegan french toast, you’re going to need the following ingredients:

  • Ezekial bread (I recommend using any type of sturdy bread for this recipe, or using gluten-free bread if gluten-free)
  • Unsweetened vanilla almond milk (any plant-based milk will work)
  • Ground flaxseed
  • Coconut sugar
  • Cinnamon
  • Vanilla extract
  • Maple syrup & fresh berries (optional)

Making the French Toast

This is such a simple brunch recipe that comes together in minutes. First, you’re going to mix the almond milk, ground flaxseed, coconut sugar, cinnamon, and vanilla extract in a shallow dish or bowl. Whisk the ingredients together until they’re all combined.

Take your bread and dunk it into the milk mixture, allowing it to soak up the liquid. Let any excess liquid drip off before placing the french toast on a greased pan over medium-low heat. The french toast will cook for around 3-4 minutes per side, or until golden brown and fragrant. I like to press my french toast down with a spatula to make sure it’s cooked well.

Remove the french toast from the pan once it’s done and place it on a plate. Add whatever toppings you enjoy and serve! I love using maple syrup and fresh berries.

Ways to Top the French Toast

As I said earlier, I love adding maple syrup and fresh berries to my vegan french toast. If you don’t have those ingredients on hand, luckily there are a ton of other toppings you can use. Some delicious options would be:

  • Bananas
  • Apples
  • Peanut butter
  • Nutella
  • Ice cream
  • Chopped nuts
  • Chocolate chips
  • Drizzle of honey
  • Greek or non-dairy yogurt

Ingredients

  • 2 slices Ezekial bread or any thick bread

  • 1/3 cup unsweetened vanilla almond milk

  • 1 tbsp ground flaxseed

  • 1 tbsp coconut sugar

  • 1 tsp ground cinnamon

  • 1/2 tsp vanilla extract

  • Maple syrup (optional)

  • Fresh berries (optional)

Directions

  • In a shallow dish, combine the almond milk, ground flaxseed, coconut sugar, cinnamon, and vanilla extract. Whisk until the ingredients are evenly incorporated.
  • Heat a pan over medium-low heat and grease it with non-stick cooking spray. Take the slices of bread and dunk them in the milk mixture. Press them into the mixture to allow the bread to soak it up. Let any excess milk drip off the bread before placing the slices on the pan to cook.
  • Cook the french toast for 3-4 minutes on both sides, or until golden brown and fragrant. I like to press the french toast down with my spatula to ensure all parts of it cook. When it’s done cooking, remove the bread from the pan and place it on a plate. Add your toppings and enjoy!
