Dates seem to be a weird and underrated fruit. I know, so weird to think that it’s a fruit! They are incredibly versatile and super sweet, which makes them the perfect dessert. I made a creamy and dreamy caramel tahini sauce that’s stuffed in these dates to make them absolutely incredible! These Caramel Tahini Stuffed Dates are vegan, gluten-free, dairy-free, and refined sugar-free. SO GOOD.

I love easy and quick desserts that can be kept in the freezer whenever I need something sweet. This recipe is definitely that. You can make a whole batch of these, store them in the freezer, and pop one in your mouth whenever you’re in need of some energy or sweetness. I’m telling you, these taste like a candy bar that’s filled with caramel and chocolate. Unreal!

What Ingredients Do I Need?

You really don’t need too many ingredients to make this recipe. We love a good recipe that requires minimal ingredients! Here’s everything you’ll need:

  • Medjool Dates
  • Tahini
  • Maple syrup
  • Vanilla extract
  • Dark chocolate chips
  • Coconut oil

This recipe requires very minimal ingredients, but they seem to be ingredients that most people don’t have or have never even heard of.

Dates are a fruit that are super soft, sticky, and incredibly sweet. Despite how tiny they are, just a single serving (which is only a few) has a great amount of fiber, iron, potassium, copper, and magnesium. Who knew that such a small fruit could pack so many nutrients!?

Now for tahini, what even is it?? Tahini is made from ground-up sesame seeds. I know it sounds weird to put sesame seeds with fruit, but stay with me on this. Tahini resembles peanut butter in its texture and flavor. Sesame seeds are high in healthy fats, antioxidants, and anti-inflammatory properties.

How to Make the Dates

This recipe requires no baking, which makes it super simple for anyone! The only “cooking” required is heating up the caramel sauce, which is easy and quick.

Start by adding the tahini, maple syrup, and vanilla extract in a small saucepan over medium heat. Stir it so that everything combines and the sauce is creamy and smooth. You can remove it from the heat and allow it to sit and thicken for 10-15 minutes once it’s all combined.

While the sauce is thickening, you can prep the dates. Most Medjool dates come with pits in them, so you’re going to have to remove them. Grab a small knife and slice the dates long ways, being careful not to cut through the whole date. You just want to make a slit.

You’re going to see the pit in the date, so all you have to do is remove it with your fingers or the knife and throw it away. Repeat this process for all of the dates, and place them on a parchment-lined baking sheet or plate that will fit in your freezer.

Once all the dates are prepped and the sauce has cooled off a bit, you can start assembling. Use a small spoon to scoop some of the tahini sauce and place it in the center of the dates. Place them in the freezer for around 20 minutes to set.

After the dates have set for a bit, you can make the chocolate mixture. Combine the chocolate chips and coconut oil in a microwave-safe bowl and microwave in 30-second intervals until melted. Once it has melted, you can use a spoon to drizzle the chocolate mixture over the dates. As much or as little as you want!

Pop the dates back in the freezer for a few hours to allow them to set. Once they’ve set, you can transfer them to a freezer-safe bag to store in the freezer. Such a great dessert or snack!

Storing the Dates

These stuffed dates are best kept in the freezer to have for an easy dessert or snack. You can eat them straight from the freezer, or allow them to sit at room temperature for a few minutes to soften a bit. They will stay fresh in the freezer for up to 6 months.

  • 19-20 Medjool dates, pits removed

  • 1/3 cup tahini

  • 1/4 cup maple syrup

  • 1/2 tsp coconut oil

Directions

  • Combine the tahini, maple syrup, and vanilla extract in a small saucepan, and heat over medium heat until melted and combined. Once it’s all combined, remove it from the heat and allow it to sit and thicken for 10-15 minutes. You can prep and remove the pits from the dates during this time.
  • Place the pitted dates on a parchment-lined baking sheet that can fit in your freezer. Use a small spoon to scoop some of the tahini mixture into each of the dates. Repeat for all of them, and place the tray in the freezer for around 20 minutes.
  • Once you remove the dates from the freezer, you can prepare the chocolate mixture. Add the chocolate chips and coconut oil to a microwave-safe bowl and microwave for 30-second intervals until completely melted and smooth. Use a spoon to drizzle the chocolate over the dates. Place back in the freezer for a few hours to set.
  • When the dates have set, you can transfer them to a freezer-safe bag to be kept in the freezer. Enjoy whenever you want!
