It’s the holiday season! Is it really the holidays without chocolate bark?! This Peppermint Christmas Bark is vegan, and packed with delicious ingredients like chocolate, peanut butter, and pretzels. What more could you ask for in a dessert? Oh, and did I mention that this is a no-bake recipe? Let’s get to the dessert making!

This is the perfect recipe to make with children or picky eaters. The beauty of this chocolate bark is that there is really no way you could go wrong. You can add any ingredients you like, and take out whatever you don’t. Personally, I’m not a huge fan of peppermint, but my family is. If you’re the same way, feel free to leave it out! I promise that it will still be delicious.

What Ingredients Do I Need?

To make this Peppermint Christmas Bark, you’re going to need the following ingredients:

  • Dark chocolate chips
  • Coconut oil
  • Peanut butter
  • Pretzels
  • Candy canes

Making the Bark

Here comes the fun part! Start by having all of your ingredients ready to go, because once the chocolate is melted, you only have a short-time frame to get everything set before it hardens.

Place your candy canes and pretzels in two separate plastic bags. Use a kitchen mallet or wine bottle to gently crush the candy canes and pretzels. You still want some large pieces, so it won’t take too much force! Set those aside once they’re crushed.

In a medium-sized bowl, add the peanut butter and coconut oil. Melt in the microwave in 30-second intervals until the peanut butter is smooth and pourable. Set aside.

Place the chocolate chips and coconut oil in a large bowl. Melt them in the microwave in 30-second intervals until smooth and creamy (same thing you did for the peanut butter).

Grab a baking sheet and line it with parchment paper. Pour the melted chocolate on top of the parchment paper, using a spoon to spread it out. You don’t want it to be too thin, so no need to spread it too much. Use a spoon to drizzle the peanut butter on top and swirl it around if you choose. Sprinkle the crushed pretzels and candy canes evenly on top.

Once everything is on the melted chocolate, place the tray in the freezer for it to set. It should take around 3-4 hours. When the bark is set, remove it from the freezer and gently use your hands to break the bark apart into pieces. No rhyme or reason to how big or small the pieces are, totally up to you!

Store the bark in a freezer-safe bag and enjoy during the holiday season!

If you’re not a peppermint fan, you can still enjoy this recipe! Here are some topping ideas that you can sprinkle on top of the melted chocolate that would taste amazing:

  • Crushed nuts
  • Dried fruit
  • Chocolate cookies
  • Sprinkles
  • Any type of nut butter
  • Crushed potato chips (sweet & salty!)
  • Melted white chocolate

How to Store the Bark

This bark stores best in the freezer so that nothing is melty…we want it to stay nice and crisp! After you break the bark into smaller pieces, store them in a freezer-safe bag. They will stay fresh in the freezer for 6 months. Just take a piece out when you’re ready to eat and enjoy!
