It’s the holiday season, which means…COOKIES!! Does anyone else absolutely love baking during the holiday season!? I experimented with some recipes and came up with these paleo, dairy-free, gluten-free, and refined sugar-free white chocolate cranberry cookies. And let me tell you, they are delicious! They’re the perfect little cookies that come together so easily and have amazing flavor. Everyone will go crazy for them at the dessert table!

I first tried white chocolate cranberry cookies last year. Man, was my holiday cookie game changed. I cannot believe I had never had them before! Between the sweetness of the cranberries and the smooth white chocolate chips…they are a winner. The fact that these white chocolate cranberry cookies are dairy-free and gluten-free is the icing on top! You can serve them for the holidays, or whenever you’re craving a delicious cookie.

What Ingredients Do I Need?

These white chocolate cranberry cookies are super simple to make. They come together in one bowl and don’t require any mixers or crazy equipment. Here are all the ingredients you’ll need:

  • Eggs
  • Coconut oil
  • Coconut sugar
  • Vanilla extract
  • Almond flour
  • Baking powder
  • Salt
  • Dried cranberries
  • White chocolate chips

Pantry Swaps

If you don’t have all of the ingredients to make these white chocolate cranberry cookies, don’t throw in the towel just yet. There are some easy pantry swaps you can make, they just may not be dairy-free or gluten-free.

  • Eggs –> Chia/flax eggs (For a VEGAN version)
  • Coconut sugar –> Cane sugar
  • Coconut oil –> Vegetable oil or melted butter
  • Almond flour –> All-purpose flour

Mix-Ins

These white chocolate cranberry cookies can be made any way you like if you don’t like the mix-ins. The actual cookie base resembles a snickerdoodle because of the cinnamon flavor. Here are some mix-ins that would be delicious in these cookies:

  • Dark chocolate chips
  • Chopped nuts
  • Dried fruit
  • M&M’s
  • Peanut butter cups
  • Crushed pretzels
  • Marshmallows
  • Crushed graham crackers

How to Store These Cookies

Since these cookies do not contain any preservatives, they are best kept in the refrigerator. They will stay fresh in there for up to 1 week or can be kept in the freezer for up to 1 year.

Ingredients

  • 2 eggs

  • 1/4 cup melted coconut oil

  • 1/2 cup coconut sugar

  • 1 tsp vanilla extract

  • 1 3/4 cups almond flour

  • 1/2 tsp baking powder

  • 1/4 tsp salt

  • 1/4 cup dried cranberries

  • 1/4 cup white chocolate chips

Directions

  • Preheat the oven to 350 degrees.
  • In a large bowl, whisk together the eggs, melted coconut oil, coconut sugar, and vanilla extract.
  • In a separate bowl, combine the almond flour, baking powder, and salt. Stir until the dry ingredients are well mixed.
  • Combine the almond flour mixture into the wet ingredients and stir until a thick batter forms.
  • Fold in the cranberries and white chocolate chips until they are evenly distributed.
  • Use a tablespoon measure to scoop the cookies onto a greased baking sheet. Press them down with your fingertips so they form a rounded cookie shape. The cookies will not spread.
  • Bake for 11-13 minutes, or until you can see a golden ring forming along the bottom of the cookies. Transfer them to a baking rack to cool completely before storing. Enjoy!
