Another fun french toast recipe for you! This banana french toast is dairy-free, low in sugar, and totally delicious. It’s the perfect Sunday brunch to make if you have some ripe bananas that have seen better days. You can make it just for you, or to please a crowd if you have one. Make sure you give this banana french toast a try and have it become your new go-to brunch!

Are you a huge french toast fan too!? (I’m assuming so since you’re reading this recipe!) Whenever I go out to brunch, french toast is always the first thing my eyes go to on the menu. I’ve learned to recreate it at home because 1. brunch can be expensive and 2. I’m trying to go out to eat less because of COVID. Banana Bread French Toast

What Ingredients Do I Need?

For this banana french toast, you just need the basic “french toast” ingredients. Whatever milk and bread you have will work, which makes this recipe super customizable! Here is everything you’ll need:

  • Banana
  • Eggs
  • Almond milk
  • Stevia
  • Cinnamon
  • Vanilla extract

How to Make French Toast

Making french toast is honestly super simple. It’s definitely not as time-consuming as you may think. Once you have the egg mixture whipped up and the bread on the griddle, you’re set!

Making the mixture– It’s pretty much that simple. All you have to do is find a shallow bowl, and combine all of the above ingredients besides the bread. For this recipe specifically, you just need to make sure you mash the banana well with the back of a fork or whisk before adding the rest of the ingredients. The key to this recipe is using a super ripe banana to get the ultimate sweetness!

Dunking the bread– Once you have your egg mixture ready to go, the next step is to dunk the bread in there and get it cooking. When you dip the bread into the mixture, you really want to allow it to soak everything up. You can let any excess drip off, but you want to make sure the banana is all over.

Cooking the french toast– You’ve made it to the last step! Grab a pan and let your egg coated bread cook over medium heat until it’s nice and golden. You’ll know it’s cooking well when your house smells like banana bread!


Toppings

This banana french toast recipe is super versatile and works well with pretty much any toppings you have on hand. I topped mine with some peanut butter, greek yogurt, and fresh blueberries. You can add some extra sliced banana, diced apples, maple syrup, fresh berries, or chopped walnuts. Get creative!

Ingredients

  • 2 slices Ezekial bread or any whole-wheat bread

  • 1 ripe banana

  • 1/4 cup milk

  • 1 tsp cinnamon

  • 1 tsp vanilla extract

  • 1/2 tsp stevia powder

Directions

  • In a shallow bowl, mash your banana with the back of a fork or whisk until smooth. Add the milk, cinnamon, vanilla extract, and stevia. Whisk until well combined.
  • Dip your bread into the egg mixture until it’s totally coated. Press it in with your fingers to allow all of the mixture to soak into the bread. Let any excess drip off.
  • Place your bread slices on a greased pan over medium heat. Cook for 3-4 minutes per side, or until golden-brown and fragrant.
  • Serve with any toppings you like and enjoy!
