Pumpkin pancakes for the win! These pumpkin pancakes are gluten-free, dairy-free, and packed with delicious chocolate chips. They are the perfect fall breakfast that is comforting and really puts you in the holiday mood. You can make these for special occasions, or they’re easy enough to make any day of the week! I usually save pancakes for the weekend. I’m not sure why, I guess they just have a stigma of being time-consuming and not meant for weekday mornings. I took it upon myself to bust this myth and make these pumpkin pancakes on one of my busy mornings. Instead of waiting for the weekend, I made these pancakes on a Thursday morning during a Zoom meeting and they couldn’t have been easier! All you need is a blender and pan, then you’re set. You’ll be making these pumpkin pancakes every day!

What Ingredients Do I Need?

In order to make these delicious pumpkin pancakes, you only need a few simple ingredients! No whisking or mixing required, all you need to do is throw all the ingredients in a blender and you’re set. Here’s everything you’ll need:

  • Pumpkin puree (NOT pumpkin pie filling)
  • Eggs
  • Rolled oats
  • Pumpkin pie spice
  • Cinnamon
  • Vanilla extract

  • Baking powder
  • Chocolate chips

How to Make These Pancakes

As I mentioned earlier, all you need is a blender and you’re set! I’ll link the magic bullet I use, here. Since this recipe is single-serve, you can use a small blender, or you can make a bigger batch for a crowd.

Once you have all the ingredients ready, you just toss them in the blender (except for the chocolate chips), mix it up and you’re ready to cook them! This batter makes 3 small pancakes that are perfect to fit in one pan. Just cook them over medium heat until they’re browned and fragrant! Simple as that.


Toppings

These pumpkin pancakes are extremely versatile in what you can use for toppings. I used creamy peanut butter, maple syrup, and a side of fresh berries.

Some other toppings that would be delicious are caramelized apples or bananas, chopped pecans, butter, Nutella, greek yogurt, whipped cream, or ice cream.

You may just need to make them more than once so that you can try all of those amazing toppings!

Pumpkin Chocolate Chip Pancakes

Ingredients

  • 1 egg

  • 1/4 cup pumpkin puree

  • 1/3 cup rolled oats

  • 1/2 tsp vanilla extract

  • 1/2 tsp pumpkin pie spice

  • 1/4-1/2 tsp cinnamon (depends on how much you like)

  • 1/4 tsp stevia

  • 1/4 tsp baking powder

  • 2-4 tbsp chocolate chips

Directions

  • In a blender or food processor, add your egg, pumpkin puree, rolled oats, vanilla extract, pumpkin pie spice, cinnamon, stevia, and baking powder. Blend until a smooth batter forms.
  • On a greased pan over medium heat, pour your batter into 3 even pancakes. Sprinkle the chocolate chips over the top of them.
  • Cook the pancakes for 3-4 minutes per side, or until golden brown.
  • Serve with your preferred toppings and enjoy!
