I get so excited during the fall because of the pumpkin breakfast and dessert recipes that come out. If I go out for brunch, I love getting pumpkin pancakes or pretty much anything with pumpkin in it. Check out my pumpkin overnight oats recipe, here! I’ve never had french toast with pumpkin, but I knew that I had to create it. This recipe was a huge hit in my house and something that I’ll definitely be making again. My mom came in from grocery shopping and said “boy, something smells good in here!” All the fall flavors and scents will fill your home.
What Ingredients Do I Need?
For this french toast, you only need a few key ingredients. You can really get creative when it comes to your toppings, but I decided to keep it simple. Here is everything you’ll need:
- Ezekial bread (or any bread)
- Canned pumpkin puree
- Eggs
- Almond milk
- Maple syrup
- Cinnamon
- Pumpkin pie spice
- Vanilla extract
- Greek yogurt (optional)
Buying Pumpkin
When it comes to purchasing your pumpkin for this recipe at the store, it is SO important that you get plain pureed pumpkin and not pumpkin pie filling. The pumpkin pie filling is loaded with sugar and additives that you do not want in your french toast. Instead, purchase the plain pumpkin puree that has only 1 ingredient…pumpkin. This way, you’re in control of how much sugar goes into your pumpkin pie french toast!
Topping Your French Toast
As far as topping your french toast, you can really get creative! I wanted to keep mine simple and traditional with just some maple syrup and a dollop of Greek yogurt. Here are some other toppings that would be delicious for pumpkin pie french toast:
- Fresh berries
- Bananas
- Ice cream
- Whipped cream
- Chopped pecans
- Peanut butter
- Granola
- Pumpkin seeds
Pumpkin Pie French Toast

4 slices Ezekial bread or any whole-wheat bread
1 egg
1/4 cup almond milk
1/4 cup pumpkin puree
2 tbsp maple syrup
1 tsp vanilla extract
1/2 tsp pumpkin pie spice
1/2 tsp cinnamon
1/4 cup plain greek yogurt (optional)
Directions
- In a shallow dish, whisk together the egg, almond milk, pumpkin, maple syrup, vanilla extract and spices.
- Heat a pan over medium heat. Take your bread and dip each slice into the egg mixture and allow any excess to drip off.
- Place your bread on the pan and cook for around 3 minutes per side, or until golden brown.
- Once your french toast is done, top with greek yogurt and some extra maple syrup. Enjoy!
