You can always count on the fact that I have some type of dessert in my fridge. These have been a go-to for me the past few weeks. I love having these blondies on their own, but they’re even better warmed up in a bowl with ice cream. No matter how you eat them, you’re going to be blown away by how tasty, easy, and healthy these are!



What Ingredients Do I Need?

To make these peanut butter chocolate chip blondies, here are all the ingredients you’re going to need:

  • Eggs
  • Peanut butter
  • Coconut sugar
  • Maple syrup
  • Coconut oil
  • Vanilla extract
  • Almond flour
  • Baking powder
  • Salt
  • Chocolate chips

Pantry Swaps

If you don’t have all the required ingredients, here are some swaps you can make:

  • Coconut sugar –> Cane sugar
  • Maple syrup –> Honey
  • Coconut oil –> Melted butter or olive oil
  • Almond flour –> All-purpose flour or oat flour

How to Make the Blondies

This blondie recipe is a one-bowl recipe that is super simple to make. Start off by grabbing a large bowl, and combining the egg, peanut butter, coconut sugar, maple syrup, melted coconut oil, and vanilla extract. Mix until all the wet ingredients are evenly combined.

Once the wet ingredients are combined, add in the almond flour, baking powder, and salt. Stir until a thick batter forms (it’s going to be sticky).

Grab a square 9″x9″ baking dish and line it with parchment paper. Spray the paper with non-stick cooking spray so that the blondies don’t stick. Pour the blondie batter into the baking dish and use a spoon to spread. If the batter is too sticky, you can spray your hands with non-stick cooking spray and press the batter down with your hands. Sprinkle as many chocolate chips on top as you like.

Bake the blondies for 20 minutes. Let the blondies cool completely before slicing and storing. Enjoy!

These blondies are best kept in the refrigerator for maximum freshness. You can absolutely microwave them for a few seconds when you’re ready to eat them if you like. They will stay fresh in the fridge for up to 1 week, or you can keep them in the freezer in an airtight bag for up to 6 months.

Ingredients

  • 1 egg

  • 1/2 cup all-natural peanut butter

  • 1/3 cup coconut sugar

  • 1/4 cup maple syrup

  • 3 tbsp melted coconut oil

  • 1 tsp vanilla extract

  • 1 cup almond flour

  • 1/2 tsp baking powder

  • 1/4 tsp salt

  • 1/2 cup chocolate chips

Directions

  • Preheat the oven to 350 degrees. Line a square 9″x9″ baking pan with parchment paper and spray with non-stick cooking spray. Set aside.
  • In a large bowl, combine the egg, peanut butter, coconut sugar, maple syrup, melted coconut oil, and vanilla extract. Stir until well combined.
  • Into the same bowl, add in the almond flour, baking powder, and salt. Stir until a thick and sticky batter forms. Pour the batter into the baking dish and spread it with a spoon. If the batter is too sticky, spray your hands with non-stick cooking spray and use them to spread the batter. Sprinkle the chocolate chips on top of the batter and bake for 20 minutes
  • Once the blondies have finished baking, remove them from the oven and let them cool completely before slicing and serving. Cut the blondies into 9-12 slices and enjoy!
