Who doesn’t love cookie dough?! Especially when it’s involved in breakfast. This Cookie Dough Smoothie Bowl is a refreshing and sweet breakfast that is gluten-free, dairy-free, vegan, and added sugar-free. I’m telling you, this seriously tastes like you’re eating cookie dough out of the bowl. There’s even a sneaky serving of vegetables in there! Tasty, delicious, and so easy to make.

Smoothie bowls are a year-round breakfast for me. Doesn’t matter if it’s hot or cold out, you can sign me up! This Cookie Dough Smoothie Bowl makes the perfect summer breakfast for hot mornings. You could also have it in the winter when you’re craving cookies for breakfast (or you can just eat cookies for breakfast!). Either way, you’re absolutely going to love this smoothie bowl.

What Ingredients Do I Need?

This cookie dough smoothie bowl is made from fresh fruit, whole grains, and a few other ingredients. Who knew!? Here’s everything you’re going to need:

  • Frozen bananas
  • Frozen cauliflower rice (or frozen cauliflower florets)
  • Rolled oats
  • Unsweetened vanilla almond milk (any milk will work)
  • Medjool dates
  • Vanilla Protein Powder (I use the Pea Protein from Trader Joe’s)
  • Peanut butter
  • Vanilla extract
  • Cinnamon
  • Dark chocolate chips

Ingredient Uses

Some of those ingredients may seem a little weird to be used in a smoothie bowl, especially a cookie dough smoothie bowl. Here’s the breakdown:

  • Frozen bananas: These add sweetness and thickness to your smoothie bowl. If you ever have ripe bananas on hand, just peel and slice them, then store them in a freezer-safe bag in the freezer. You’ll be stocked up for smoothie bowls!
  • Frozen cauliflower rice: You won’t be able to taste this, I promise. Cauliflower doesn’t really have a taste, so it’s just being used to add bulk and thickness to the smoothie bowl. Plus, it’s nice to get a serving of veggies in!
  • Rolled oats: Another ingredient that you won’t be able to taste, it’s just going to thicken the smoothie! The oats also make the smoothie more filling since you’re adding some extra fiber and whole grains.
  • Medjool dates: Dates are incredibly sweet and act as the sweetener for this smoothie along with the bananas. Don’t let the look scare you, these are DELICIOUS. Check out these Caramel Tahini Stuffed Dates, here!
  • Vanilla Protein Powder: This is key for the recipe because it adds lots of flavor, along with a boost of protein! You could use any flavor you like, but I find that vanilla works really well in this recipe.
  • Peanut butter: I mean c’mon, how could I not add peanut butter to this?! It adds some more protein and healthy fats to help keep you full and satisfied.

Making the Smoothie Bowl

When you’re making a smoothie bowl, it makes it 10x easier if you have a large, high-speed blender. I have a Magic Bullet, which makes it a little tougher. A large blender makes the smoothie a bit thicker because you don’t have to add as much liquid. Either way, I promise that it’s going to be delicious!

The key to making this smoothie bowl nice and thick is using frozen bananas and frozen cauliflower. I promise you won’t even be able to taste the cauliflower! It just adds some bulk and thickens the smoothie up. Just peel and slice some ripe bananas, and stick them in the freezer before you want to make this. You could do the same with the cauliflower rice, but I like to buy mine already frozen. If you don’t have cauliflower rice, you could use frozen cauliflower florets.

Combine the frozen bananas, cauliflower rice, rolled oats, almond milk, Medjool date (make sure to remove the pit), protein powder, peanut butter, vanilla extract, and cinnamon in your blender. Start blending it, and stop to scrape the sides down as needed. You may need to add some extra milk a tablespoon at a time if it’s too thick.

If you’re using a Magic Bullet, I usually have to stop to shake my blender up a few times. After everything is finally blended up, you’re ready to eat! Pour the smoothie into a bowl and top with some dark chocolate chips. You could also drizzle an extra spoonful of peanut butter over top to make it even more decadent.

Topping Ideas

Chocolate chips are a must for this recipe, but there are so many other toppings that are amazing. Here are some that I love and taste delicious!

Ingredients

  • 1 frozen banana

  • 1/2 cup frozen cauliflower rice (or frozen cauliflower florets)

  • 1/4 cup rolled oats

  • 1/4 cup unsweetened vanilla almond milk (plus more if too thick)*

  • 1 Medjool date, pitted

  • 1 scoop Vanilla Protein Powder

  • 1-2 tbsp peanut butter

  • 1/2 tsp vanilla extract

  • Sprinkle of cinnamon

  • Dark chocolate chips

Directions

  • In a large blender or Magic Bullet, add the frozen banana, cauliflower rice, rolled oats, almond milk, Medjool date, protein powder, peanut butter, vanilla extract, and cinnamon. Begin blending, scraping down the sides as needed. You may need to add a few more splashes of almond milk as you’re blending if the mixture is too thick.
  • Once everything is blended, pour your smoothie into a bowl and top with dark chocolate chips and any other toppings you desire. Enjoy!

Notes

  • *If the smoothie is too thick and not blending, you may need to add some more almond milk. Add it 1 tablespoon at a time, to ensure that the smoothie doesn’t become too runny.
