Do you love having delicious snacks on hand that take less than 10 minutes to make?? Yup, me too. If you do too, you’re going to love these coconut chocolate chip energy balls! These energy balls are the tastiest snack that are vegan, gluten-free, dairy-free, and refined sugar-free. They’re packed with oats, chia seeds, coconut, peanut butter…you know, all the good stuff.

I love making some type of snack on the weekend to have all week long whenever I’m hungry. There’s something so satisfying about just reaching into the fridge, grabbing a snack, and feeling good and nourished afterward. These coconut chocolate chip energy balls are the perfect snack for kids, busy moms, college students, or anyone who needs something to add to their weekly meal prep. SO GOOD.

What Ingredients Do I Need?

These energy balls are super customizable and can really be made with whatever ingredients you have on hand. Here is everything you will need:

  • Rolled oats
  • Peanut butter
  • Maple syrup
  • Shredded coconut
  • Chocolate chips
  • Chia seeds
  • Vanilla extract

Making the Energy Balls

I’m telling you…these are the easiest snack you could make. Perfect if you have kids and want to get them involved!

You’re going to start off by grabbing a bowl and spoon. Combine the peanut butter, maple syrup, and vanilla until fully combined.

Now you’re going to add the rolled oats, shredded coconut, chocolate chips, and chia seeds to the wet ingredients. Stir until a thick batter forms.

Grab a tablespoon-sized ice cream scoop and form the batter into the energy balls. This recipe makes around 20 energy balls using an ice cream scoop.

Store them in the refrigerator and you’re all done!

If you don’t have all of the ingredients needed to make this recipe, you can use whatever you have on hand. Here are some swaps and add-ins that would taste amazing:

  • Peanut butter –> Any nut or seed butter
  • Maple syrup –> Honey
  • Chia seeds –> Flax seeds
  • Add-ins: Dried fruit, crushed pretzels, white chocolate chips, peanut butter cups, crushed nuts, sunflower seeds, etc…

How to Store

These energy balls should be kept in the refrigerator in an airtight container. They will stay good in there for up to 1 week. You can also keep them in the freezer in an airtight bag for up to 6 months. I would let them thaw in the refrigerator after freezing instead of microwaving them.

Ingredients

  • 3/4 cup all-natural peanut butter

  • 1/3 cup maple syrup

  • 1 tsp vanilla extract

  • 1 cup rolled oats

  • 2/3 cup shredded coconut

  • 1/3 cup chocolate chips

  • 2 tbsp chia seeds

Directions

  • In a large bowl, combine the peanut butter, maple syrup, and vanilla extract until fully combined.
  • Add in the rolled oats, shredded coconut, chocolate chips, and chia seeds with the wet ingredients. Stir until a thick batter forms.
  • Use a tablespoon-sized ice cream scooper to form the batter into balls. If the batter is too sticky, pop it in the fridge for 5-10 minutes.
  • Keep the energy balls in the refrigerator in an airtight container for up to 7 days. Enjoy!
