Growing up, I used to love having pretzels filled with peanut butter, especially in school lunches. Actually…who am I kidding, I still love them now! Especially the ones from Trader Joe’s that are covered in chocolate. My mouth is already watering! My point is, peanut butter and pretzels seem to go together like peanut butter and jelly. These peanut butter pretzel blondies are the perfect combination of those flavors!
I wanted to come up with a blondie recipe, but add a little twist to it (you can try my chickpea blondie recipe, here). Why not add pretzels and chocolate for some crunch and sweetness!? After all, you always need some salty to go with the sweet. The pretzels add an amazing crunch, while the chocolate and peanut butter provides the perfect sweetness. Plus, this recipe is gluten and dairy-free which is always a plus!
These peanut butter pretzel blondies will keep you full and satisfied, due to the healthy fats in it. The almond flour and peanut butter provide a good amount of fat, which is what you want when looking for a dessert or snack. There won’t be any crazy blood sugar spike that leaves you hungry an hour later. Make sure you give this recipe a try if you’re looking for a delicious snack or dessert!
What Ingredients Do I Need?
These amazing peanut butter pretzel blondies require only a few ingredients. I guess peanut butter and pretzels are the obvious ones, but here is everything you will need:
- Peanut butter
- Eggs
- Honey
- Vanilla extract
- Almond flour
- Salt
- Baking powder
- Chocolate chips
- Gluten-free pretzels
Pantry Swaps
If you don’t have all of those ingredients, there are some easy swaps you can make with ingredients you most likely have lying around!
- Peanut butter –> Any nut butter
- Eggs –> Chia/Flax eggs
- Honey –> Maple syrup
- Almond flour –> All-purpose flour
- Gluten-free pretzels –> Regular pretzels

How Should I Store These?
These peanut butter pretzel blondies are best kept in the refrigerator for up to 1 week. If not eaten in a week, they can be kept in the freezer for up to 6 months.
Peanut Butter Pretzel Blondies

1 cup all-natural peanut butter*
1 egg
1/3 cup honey
1 tsp vanilla extract
3/4 cup almond flour
1/4 tsp salt
1/4 tsp baking powder
1/4 cup dark chocolate chips
1/2 cup gluten-free pretzels
Directions
- Preheat the oven to 350 degrees.
- In a large bowl, mix together the peanut butter, honey, egg, and vanilla extract until well combined.
- In a separate bowl, combine the almond flour, salt, and baking powder.
- Add the dry ingredients in with the wet and stir until everything is well incorporated.
- Grease and line a 9″x13″ baking pan with parchment paper. Pour the batter in the baking dish and evenly distribute.
- Sprinkle the chocolate chips on top of the batter. Crush the pretzels in your hands, or place them in a bag and roll them with a rolling pin. Sprinkle the crushed pretzels on top.
- Bake for 20 minutes and enjoy!
Notes
- * If not using all-natural peanut butter or your peanut butter isn’t runny, make sure you pop it in the microwave for 20-30 seconds to loosen it up and make it easier to mix!
