Are you ready for a handheld dessert that’s packed with sweetness, chocolate, and peanut butter? That’s exactly what you’ve got with these Brown Sugar Peanut Butter Brownie Cups. They’re gluten-free, dairy-free, and are super simple to make!

Brownies are probably one of my favorite desserts, especially with peanut butter. My brownie pan may or may not have been dirty and I may or may not have wanted to clean it, so brownie cups it was. And let me tell you, they turned out absolutely amazing. Putting our muffin tins to a new use!

What Ingredients Do I Need?

You don’t need a whole lot of ingredients to create these brownie cups! Here’s everything you’ll need:

  • Eggs
  • Light brown sugar
  • Coconut oil
  • Almond flour
  • Cacao powder
  • Baking powder
  • All-natural peanut butter

Making the Brownie Cups

Start by preheating your oven to 350 degrees. In a large bowl, add your eggs, brown sugar, and melted coconut oil. Mix until everything is combined and the eggs are totally whisked.

Into the same bowl, add in the almond flour, cacao powder, and baking powder. Fold the dry ingredients into the wet until a thick and dark batter forms.

Line a muffin tin with liners and spray them with non-stick cooking spray. Use a 1/4 cup measuring cup to scoop the batter into each of the muffin tins. Once all the batter is used up, you’re going to dollop about 1 tsp of peanut butter on top of each brownie. Be careful not to add too much, as the center of the brownie won’t cook through.

Bake the brownie cups for 20 minutes, or until the edges begin to crisp up a bit. Allow them to cool for a few minutes before digging in and enjoying the gooey delicious-ness!

Getting Creative!

I love these brownies as they are, but you can totally make them your own and get creative! Some ingredients you can mix into the batter include chocolate chips, mixed nuts, sprinkles, or crushed pretzels.

As for serving, there are tons of options. Here are some of my favorite ways to enjoy these:

  • On their own heated up
  • With ice cream or yogurt on top
  • Topped with whipped cream
  • Crushed into a yogurt bowl
  • With a cup of tea or coffee

Storing Leftovers & Reheating

These brownie cups are best kept in an airtight container in the refrigerator for up to one week. You can also keep them in the freezer for up to 3 months in a freezer-safe bag or container.

When you’re ready to eat one, you can absolutely eat it straight from the fridge, but they’re even better warmed up. Feel free to place the brownie on a plate or paper towel, and microwave for 10-15 seconds, or until the peanut butter has melted. If you’re reheating from the freezer, you’ll have to microwave a bit longer depending on your microwave.
