Blueberry Bagel French Toast

Two of my favorite breakfast foods combined into one amazing dish! Blueberry bagel french toast is a cross between…you guessed it, bagels and french toast. I was craving french toast one morning but also saw one lonesome bagel in the freezer that was just dying to be eaten. It was a tough decision between bagels or french toast, but then it came to me. Blueberry bagel french toast was born!

For a long time, I didn’t allow myself to eat bagels because they weren’t “healthy” or they had too many carbs. I’ve now learned that I can eat bagels, pizza, ice cream, etc. and still care about my body and wellness. I no longer count my calories or track what I eat. I just focus on what foods make me feel good physically and mentally (you can read why I don’t count my calories here). If I ate bagels every day, would I feel my best, physically? Probably not. Would it feed my soul and make me feel good on the inside if I allowed myself to eat one whenever I craved it? Absolutely. I would much rather feel my best on the inside.



What Ingredients Do I Need?

I personally LOVE the bagels from Dave’s Killer Bread. Specifically, the Boomin’ Berry Bagel (not sponsored, just love them!). Here is everything else you will need for this recipe:


Types of Bagels

For this recipe, I used the Boomin’ Berry Bagel from Dave’s Killer Bread. The reason I opted for this bagel instead of a “regular” one is because of the protein content, whole grains, and berry flavor. Most bagels don’t contain an adequate amount of protein or whole grains, which will lead to a blood sugar spike, and leave you feeling hungry an hour later. Sometimes, a regular bagel is exactly what I’m craving. Other times, I want something that will fuel my body a little longer.

These bagels contain whole grains, which are high in fiber. Fiber helps you feel full and keeps your digestion moving. They also have 13 grams of protein, which is a great amount for a bagel. Again, I want to stress that I don’t have any problems with a regular bagel. When I’m out to brunch, that is exactly what I want! When I want something a little sweeter and more substantial, that is when I opt for the whole wheat, high protein bagel.


Toppings & Sides

Hence the name of the recipe, blueberry bagel french toast, blueberries are highly recommended for this recipe. I also added some greek yogurt on the side for dipping the french toast and for some extra protein. If you don’t have those ingredients on hand or want to add something else, here are some other options that would work:

  • Strawberries
  • Blackberries
  • Chocolate chips
  • Whipped cream
  • Almond butter
  • Chopped nuts
  • Honey

Blueberry Bagel French Toast

Ingredients

  • 1 Dave’s Killer Bread Boomin’ Berry Bagel*

  • 1 egg

  • 1/3 cup almond milk

  • 1 tsp vanilla extract

  • 1 1/2 tsp ground cinnamon

  • 2 tbsp maple syrup

  • 1 tbsp peanut butter

  • 1/2 cup frozen blueberries**

  • 1/3 cup plain nonfat greek yogurt

Directions

  • Slice your bagel in half lengthwise and set aside.
  • In a shallow dish, whisk together the egg, almond milk, vanilla extract, and ground cinnamon.
  • Dip each half of the bagel in the egg mixture on both sides. Press the bagel into the mixture to allow it to set in.
  • Place each bagel half, middle side down, on a greased skillet over medium heat. Cook for 3-5 minutes on each side.
  • While the bagels are cooking, place your frozen berries in a microwave-safe bowl. Microwave in 15-second intervals until the berries are warmed and have released its juices.
  • When each side of the bagel is golden brown, place them on your plate. Top with the peanut butter, maple syrup, greek yogurt, and blueberries. Enjoy!

Notes

  • * If you don’t have the Boomin’ Berry bagel, any type of bagel will work!
  • ** Fresh blueberries can also be used in this recipe, they just won’t take as long in the microwave.
